It is in the bright green of coriander and the milky white of creamy lassi. It is in the shared plate of ‘garam wadas’ with friends outside college. It is around the ‘nukkad-wale chai ki tapri’ where the team huddled together after a gruelling client meet. It is in the aroma of sizzling butter on a giant ‘tawa’ and the anticipation building in your younger siblings’ eyes. It is in the spicy ‘jhalmuri’ wrapped in an old newspaper, that your crush and you spent reading with your heads held sideways. More personally, it is in the 5-course meal with colleagues at one of the khao gallis of India, where we began our meal with mouth-watering ‘aloo chaat’ and ended with some delectable ‘malai toast’.
The melody of food found in the streets of India, is the harmony of smell, feel, vision and beauty, tempered with nostalgia. This symphony is what we hope to bring to your table at Hawking St.
A dream project, Hawking St. was born when we realised that the kind of adrenaline rush evoked by the street foods of India was far stronger than the bland, flash in the pan emotion that happened when eating food in a luxury hotel.
Once the concept of helping people relive their happiest food memories crystallised, we went scouting across the country for the best regional street foods. From lanes of Lucknow to the ‘gallis’ of Mumbai, from the vendor in Kolkatta to the teashop in Kerala, we tasted them all.
